Ice Cream Sandwich Recipe
Hello, friends! In today’s kitchen adventure, we’re elevating the classic ice cream sandwich to something truly special, using a recipe straight from Ayesha Curry's cookbook, The Seasoned Life. It's not just any cookie recipe we're diving into today, but Ayesha’s Soft & Chewy Chocolate Chip Cookies, a favorite in our household and soon to be yours too!
Allie, my incredible wife, has perfected these cookies over time, and they’ve quickly become a staple in our home. What sets these cookies apart is the perfect balance of sweetness from the brown sugar, a hint of saltiness on top, and the gooey, melt-in-your-mouth chocolate chips. They’re the ideal cookies for creating the ultimate ice cream sandwich, especially when paired with our homemade Cinnilla ice cream.
Why We Love the Curry Family
Living in the Bay Area, it’s hard not to be fans of the Curry family. Our home shares a lot in common with theirs, with a focus on faith, cooking, and basketball. Ayesha’s cookbook, The Seasoned Life, reflects a family-oriented approach to cooking that deeply resonates with us. The book is filled with recipes meant to bring families together, highlighted by candid photos of her cooking with her children, inviting readers to involve their own kids in the kitchen. Naturally, our little chef Raegan had to be a part of creating these delightful ice cream sandwiches.
The Recipe: Ayesha Curry’s Soft & Chewy Chocolate Chip Cookies
For the cookies, we follow Ayesha’s recipe to the letter, ensuring each batch comes out perfectly soft and chewy. Here’s a simplified version of how we bring it all together for the ice cream sandwiches:
Make the Cookies: We start with Ayesha Curry’s chocolate chip cookie recipe, ensuring they come out soft, chewy, and just gooey enough to complement the ice cream.
Prepare the Ice Cream: Our homemade Cinnilla ice cream, with its creamy texture and warm cinnamon notes, is prepared and ready to go.
Assemble the Sandwiches: Once the cookies have cooled (and we've managed to not eat them all fresh out of the oven), we scoop a generous amount of Cinnilla ice cream between two cookies and gently press them together.
The Finishing Touch: A quick roll in mini chocolate chips or a sprinkle of sea salt on top can add an extra layer of texture and flavor.
Freeze: We pop the assembled ice cream sandwiches into the freezer to firm up before serving, ensuring a perfect blend of crunchy, chewy, and creamy textures.
