Thai Tea Ice Cream

Have you ever had Thai Tea? If not stop, google '“Thai Tea near me,” drive to this location, order Thai Tea and enjoy this delicious drink! I can’t even really describe it no matter how many times people ask me to. It’s a super creamy, delicious tea drink that typically uses sweetened condensed milk and sugar. The first time I ever tried it I knew I had to turn it into an ice cream.

There are a few ways you can do this at home. You can certainly use sweetened condensed milk and there are a number of recipes out there that will walk you through how to do this. I don’t use condensed milk in mine mainly because I typically don’t have condensed milk around my house, also I’ve noticed that heavy cream and milk are creamy enough for the ice cream.

What equipment do I need?

  • Ice Cream Machine (I love the Cuisinart ICE 30-BC)

  • Kitchen aid OR a large bowl and a whisk

  • Mesh strainer

Ingredients

  • 1/2 cup of Thai Tea (I used Pantai Thai Tea Mix)

  • 3/4 cup granulated sugar

  • 1 cup whole milk

  • 2 cups heavy whipping cream

Instruction

  • Steep the Thai Tea on the milk and put it in the refrigerator for 5-10 minutes

  • While the Thai Tea is steeped, mix the heavy cream and sugar in a bowl (I use a Kitchen Aid and if you’re making ice cream I’d high recommend you do the same)

  • Strain the Thai tea/whole milk into the bowl to ensure the Thai tea leaves don’t make it into the final mixture

  • Stir the mix for about 5 minutes

  • Once the mix is done pour it into the Ice Cream machine (I’ve used the same Cuisinart ICE 30-BC for 3+ years). Make sure your Cuisinart bowl is ice cold (meaning the bowl has been in the freezer for 24 hours)

  • After 25 minutes scoop your ice cream into a container (the ice cream will be soft serve consistency)

  • Put it in the freezer and let is freeze for about 3 hours if you want hard ice cream.
