Lucky Charms Ice Cream

  • 1/2 cup sugar

  • 1 1/2 cup whole milk

  • 2 cups cream

  • 1 cup lucky charms cereal

  • 1 cup lucky charms marshmallows

Let’s make some Lucky Charms ice cream.

First things first, let’s get out the Lucky Charms cereal. You may have noticed lucky charms are listed twice in the recipe. That’s because we need both the cereal as is for the base of the base ice cream, then we’ll also need the marshmallows by themselves for the mix-ins.

  • Pour 1 cup of the lucky charms cereal into a cereal bowl.

  • Separate another 1 cup of just the lucky charms marshmallows into a bowl to use at the end of the process.

Now if our goal is to make a cereal milk base for our ice cream, then we’re going to have to make actual cereal. We do that by

  • Pouring 1 1/2 cups of whole milk into the cereal bowl

You’ve got yourself a bowl of cereal but don’t eat it yet! Make a second bowl if you want to eat but for this one, take your bowl of cereal and put it back in the refrigerator for about 15 minutes. Just like the cereal milk we loved as kids when our cereal sat in it for a few minutes, we want the cereal and the milk to get acquainted with each other so the milk has a delicious flavor from the beginning.

Pull out your mixing bowl and as the cereal milk sits in the fridge I want you to

  • Pour 2 cups of heavy whipping cream into the mixing bowl

  • Pour 2/3 cup of granulated sugar into the mixing bowl

  • And pour 1/8 cup of light corn syrup into the mixing bowl

When you’re cereal milk is ready (after about 15 minutes), go grab a strainer because our lucky charms cereal has done its job. Now we need to strain out the cereal from the milk so what’s left is the delicious cereal milk flavor.

Once you have a strainer, put it over the mixing bowl and pour your bowl of cereal into the mixing bowl, leaving behind the soggy lucky charms. Discard the cereal. A lot of my recipes call for 1 cup of whole milk so you may be asking “why did you have us use 1 1/2 cups for this recipe?” Well the cereal is going to absorb a good amount of the milk and as you strain the cereal milk you’re going to lose a little bit more, leaving you with about 1 cup of cereal milk in the mixing bowl.

Now you’re base in in the mixing bowl so however you prefer, mix it all up until the base is smooth and creamy, allowing the sugar, cream, milk and light corn syrup to mix together perfectly. Once your base is ready, pour it into your ice cream machine per their instructions.
